What is Matchamisu?

Matchamisu is an alternative to the traditional Italian Tiramisu, but it's a lot better because it has healthier ingredients. It would be still an adventure to cook it, but we're sure you're going to appreciate the taste.

It's still layered, it's also heavenly fluffy, it's refreshing and has a spongy texture. A refreshing delight for the hot summer days!

What Ingredients are Needed for a Matcha Tiramisu?

You'll need just:

  • Green Tea or Matcha
  • Sugar
  • Mascarpone
  • Cheese
  • Heavy Cream
  • Eggs
  • Flour

How to Prepare Matchamisu?

There's no way you're doing this perfectly without experimenting a couple of times. But it's worth a try. If you convince a friend to help you around, that'll add up to the fun.

1. Infuse Your Green Tea Matcha

The first thing to do is infuse your green tea in sugar syrup. You'll need a cup of water and 3/4 cup of sugar. Boil this mixture, let it simmer for 3 minutes and set aside. After the syrup is no longer warm, add one tablespoon of matcha and whisk as well as you can.

The beauty of this step is that you can do it a day ahead.

2. Bake the Cake

Okay. Here's the difficult part - you'll need to pre-heat the oven at 350 degrees F (180 degrees C).

Then separate four eggs and mix the egg whites on low speed until they're homogenous. After around 1 minute of mixing, increase the pace a little bit and start adding half a cup of sugar. Increase the speed again and mix for about 2 minutes, then start adding the egg yolks one by one. Don't stop mixing until it the meringue looks creamy and fluffy.

Gradually sift in 2 tablespoons of matcha and 3/4 cup of flour.

You'll obtain a fluffy greeny dough-like mixture. Now spread it evenly on the baking paper and bake it for only 10-15 minutes. Optionally, brush it evenly with maple syrup.

Let it cool and cut it using the cookie cutter you like the most.

3. Make the Cream

Take a bowl with water and bring it to simmer.

Put 2 egg yolks, 1 tablespoon of sugar and 1 tablespoon of rum in another bowl and put this bowl on the one with boiling water, so it gently heats up. You'll want to whisk and whisk and whisk all the ingredients for about 5 minutes. Then give it some time to cool.

Take a third bowl and whip 1/2 cup of heavy cream for a couple of minutes. Then fold the whipped cream together with the egg mixture. Mix, mix, mix. Then add 1 tablespoon of matcha and blend, blend, blend. Add a 2/3 cup of mascarpone and mix, mix, mix again.

4. Layer On.. Creatively

Choose some original cups of glasses from what you have at home.

Start by adding 1 layer at the time: put a piece of sponge cake, pour some matcha-syrup, add cream, put another piece of cake, pour syrup, add cream.

It's as simple as that :)

Why is Matchamisu Better than the Original Tiramisu Recipe?

You won't know if Matchamisu is better than the original Tiramisu until you try. Several things are sure, though:

  • It's as good,
  • It's an exciting kitchen experiment,
